Currants Roll and Tansley Woods Park

Al-Hamdu Lillah, this past weekend I made Guyanese Currants Roll. The pastry is flaky and the filling is soft and a bit chewy. The tanginess of the currents, balanced with the sweetness of sugar goes well with the richness of the butter and pinch of salt in the pastry.

The below photos are from a walk on Sunday at Tansley Woods Park in Burlington. Along the trail there are some beautiful features of the park from a partnership with the Japanese city of Itabashi, namely Itabashi Garden, Itabashi Way and Itabashi Bridge. This is an inspiring cooperation between Canadian and Japanese cultures.

Allah (the Most High) says in the Holy Qur'an,

"O mankind! We created you from a single (pair) of a male and a female, and made you into nations and tribes, that ye may know each other (not that ye may despise each other). Verily the most honoured of you in the sight of Allah is (he who is) the most righteous of you. And Allah has full knowledge and is well acquainted (with all things)."

Insha Allah I am looking forward to visiting Itabashi Garden again, as it would be a nice place to reflect and write.
